The idea is great! I personally do not know Abouna Zakareya but I heard a lot of great things about him.
However, here is another suggestion: since Abouna is a clergy, and we do not want to involve the Church in our struggle, I would like to nominate Mr Adel Guindy for that position. He lives in France (not quite sure what exactly he does for living), but he is fluent in Arabic, English and French. Besides, he is a great Coptic activist and a
